Honey is a food produced by honeybees for their own nutritional needs from the nectar of flowers or honeydew. It consists of about 200 different ingredients. The composition can be very different depending on the honeys. The most important ingredients are fructose (27 to 44%), glucose (22 to 41%) and water (about 18%). Other typical ingredients include other sugars, pollen, minerals, proteins, enzymes, amino acids, vitamins, colors and flavors. Honey can be liquid or solid (crystallized). This depends mainly on the ratio of the two simple sugars fruit and glucose to each other, but also how the honey is processed and stored.
The Robinie is the so-called "False Acacia", hence the name of the honey. Acacia is often the first ray of hope for bees after a long winter, because they bloom early in the year. Acacia honey from Germany is a lover's honey, fine and sweet in the taste and not very dominant in sweetening.
